Easter Cupcakes

You will need

Cupcake Ingredients

  • I used 250 g of cupcake mix from AVEVE.
  • 2 eggs
  • 30 ml water
  • 100 g butter

Icing Ingredients

  • 250 g butter
  • 375 g icing sugar

Let’s do this

Step 1
Let’s start by preheating the oven to 150°C and line one cupcake pan with cupcake cases. I used ones with easter eggs and bunnies on them because I think they scream easter. The cases are from Dille & Kamille. They have an amazing baking section. Beat the butter until it is nice and smooth. Add the eggs, flour and water and mix for about 4 minutes. Add the mixture to the cases. I use table spoon to scoop the mixture into the cases and get an even amount in each. Pop them into the preheated over for 10 minutes. After that heat the oven to 180°C and put them into the oven for another 10-15 minutes. Leave them on a rack to cool.
Step 2
To make the buttercream icing you will need some sort of electrical mixer because doing this by hand takes a lot of time and isn’t really an option. Beat the butter for about 5 minutes. You will see that the butter will lose a lot of it’s color. Add the sifted icing sugar a little bit at a time until everything is mixed. When the buttercream is fluffy and think you can add some flavor like a few drops of vanilla extract.
Step 3
When the cupcakes are cool you can ice the cakes. I used a piping bag and a round nozzle, but you can use any kind. I think a star shaped nozzle will look nice too. I then topped the cupcakes of with some colored chocolate eggs.

As you can see this is an super easy recipe, but they taste amazing and look super cute! We hope that you like them as much as we do!
